Step 1
In a small bowl add mustard seeds chili flakes oregano and red wine vinegar . Stir and set aside for a few minutes

Step 2
Wash and chop a big bunch of coriander /cilantro then grate or crush 4 cloves of garlic. Add those in with the mustard seeds and vinegar then pour in olive oil and season with salt and pepper .

Step 3
Add the zest of 1/2 of a lime then squeeze the juice of the whole lime into the mixture . Stir with a spoon to combine . Give it a taste to check the seasoning and if necessary add a pinch of sugar to balance the tanginess . Use as a marinade or store in an airtight sterilized container in the fridge for up to a week
