Step 1
Mix together all of the cheesecake ingredients. I recommend using a stand mixer or a hand mixer. Mix until you have a smooth consistency.

Step 2
Press once roll of sugar cookie dough into a 9x9 parchment lined baking tray.

Step 3
Pour the cheesecake mixture overtop.
Step 4
Crumble the second roll of sugar cookie dough over the cheesecake layer. I cubed the sugar cookie dough so it was easier to spread overtop. I used around 90% of the second roll.
Step 5
Bake in a 350F oven for 35-40 minutes. The edges should start to brown and the top should be less glossy.
Step 6
Chill the bars completely before cutting or you will have a gooey mess! Enjoy!
