Easy to make does not take long but is best served cold. for a side salad I don't used the lettuce For a main meal I serve it on a bed of lettuce

Instructions

Step 1
Poach Chicken Add mixed herbs, garlic and onion graduals in a wide pot or Pan add chicken and cover with water. season with salt.(you can create your own spice mix for the poached chicken) Bring to boil , turn down to simmer poach for 15 minutes or till chicken is cooked. Let Rest for 10 minutes to cool then place in fridge to cool
Step 2
Slice , quarter and chop.. Celey, Spring Onion, Grapes, Almonds, Chicken in to bite size and the Parsley and Basil
Step 3
add Almonds to a dry pan and roast for 5 minutes on high heat. storing pan all the time so Almonds do not burn. Take off heat and cool
Step 4
Add Mayonnaise, Dijon mustard and Lemon Juice to mixing bowl and mix (Add lemon 1/2 Tbsp at a time and taste add more if needed, add salt and pepper and mix.
Step 5
Add all ingedents to a salad bowl and mix together till every thing is covered by the Mayonnaise dressing. cover and place in fridge till ready to serve.
Step 6
Before serving slice the lettuce place on plate and add chicken Grape mix
