This is an easy to make one bowl recipe vanilla cake. Make in 8 x 8 pan. Great with vanilla frosting, or as the base to strawberry shortcake like I did.

Instructions
Step 1
Preheat oven to 350 degrees
Step 2
Spray 8 x 8 pan with baking spray
Step 3
In large mixing bowl, whisk flour, sugar, baking soda, baking powder, and salt.

Add egg, buttermilk, vanilla, oil, whisk together.
Step 5
Add hot water and whisk till smooth.
Step 6
Pour into prepared pan and tap on counter to break up any air bubbles.
Step 7
Bake for 25 to 28 minutes and toothpick comes out clean
Step 8
Cool completely before frosting
Step 9
Frosting- beat softened butter in stand mixer for 7 minutes
Step 10
Add powdered sugar 1/2 cup at a time and beat till creamy. Add vanilla and cream for one minute. Spread over cooled cake.
