Instructions

Step 1
Preheat oven to 350F, spray an 8-inch cake pan with oil, can also use parchment paper too.
Step 2
In a medium bowl- whisk together flour, baking powder, baking soda, and salt, set aside.
Step 3
Using a hand or stand mixer- mix together butter and sugar for 3 minutes until fluffy. Slowly stream in oil.
Step 4
Add in the eggs 1 at a time, scraping down the sides after each egg. Mix in vanilla extract.
Step 5
With the dry and buttermilk- alternate adding the two to the mixer, a little at a time (dry, wet, dry, wet) Start and finish with the dry .
Step 6
Scrape down the sides and add in the sprinkles.
Step 7
Pour batter into greased pan and bake for 30-40 minutes until the top is golden and a toothpick comes out clean.
Step 8
Let cake cool on a rack before taking it out of the pan.
Step 9
While cake is cooling- make the whipped cream. Add whipping cream to a stand or hand mixer with the whisk attachment, and mix on medium-high until it starts to thicken. Once the cream begins to thicken- slowly sprinkle in sugar and vanilla extract. Continue whipping until desired consistency is reached. Keep an eye on it because it can turn into butter real quick Pop in fridge.
Step 10
When the cake is cool to the touch- use a knife to go around the edge of the cake and then flip it upside down onto the cooling rack. Once completely cooled- take a serrated knife and cut the cake down the middle horizontally.
Step 11
Assemble- on a plate place a little whipped cream to keep the cake in place. Top with one cake layer followed by whipped cream and sprinkles, add the other half on top of that and more whipped cream and sprinkles. You can go around the sides with whipped cream if you like or keep it bare for a more rustic look.
