For the crust
2 ½ cupsvanilla wafer crumbs

5 Tbsplight brown sugar

For the filling

1 cupbananas
mashed, ripe
1 ½ tspground cinnamon
¼ tspground nutmeg
2 Tbspspiced rum

For the Foster topping
¼ cupsalted butter
melted
½ cupdark brown sugar
packed
⅛ tspground nutmeg
½ tspground cinnamon
2 Tbspheavy cream
2 Tbspspiced rum
2bananas
medium, sliced

Instructions
Step 1
Preheat smoker to 275°.
Step 2
1. Mix the crust ingredients in a small bowl. Press the mixture into the bottom and up the sides of the springform pan. Use a highball glass to press evenly.

2. Smoke the crust for 20 minutes then remove to cool.
Step 4
3. In a large mixing bowl, blend the cream cheese, brown sugar, & flour on low speed until completely smooth. Low speed prevents too much air in the mixture.

4. Add the mashed bananas, cinnamon, nutmeg and dark rum. Beat on low speed until well combined.
Step 6
5. Add eggs one at a time. Then the vanilla. Mixing well after each addition.
Step 7
6. Pour the batter into the crust.
Step 8
7. Smoke for 1hr15min to 1hr30min. Cheesecake is done when it juggles just a little within 2” of center or reaches 150 degrees internal.

8. Remove the cheesecake and let sit on the counter for 30 min.

9. Refrigerate cheesecake until completely cooled and firm, 6-8 hours.

10. While cheesecake is cooling, make the bananas foster. Add pan to smoker and preheat to 250 degrees.
Step 12
11. Add the brown sugar, melted butter, nutmeg, cinnamon and heavy cream and stir until incorporated. Smoke for 30-40 minutes, stirring occasionally, until sugar has dissolved, and mixture is bubbly. Remove pan from smoker.
Step 13
12. Pour the rum into the pan, then use a lighter to light the rum. Allow the flames to burn out while swirling the pan a few times to disperse. Make sure you do this in a safe area.
Step 14
13. Add the bananas to the sauce, return to smoker, and continue cooking another 10 minutes. Remove and let mixture cool for 10 minutes before pouring on top of the cheesecake.
Step 15
14. To make the whipped cream, add heavy whipping cream, powdered sugar and cinnamon to mixing bowl and whip until stiff peaks form.
Step 16
15. Pipe a swirl border with the whipped cream around the outside edge of the cheesecake.
Step 17
17. Slice and serve.
