Matcha Burnt Basque Cheesecake + Mochi = Heaven!! You have to try this cheesecake if you like matcha, or mochi, or cheesecake, or just try it! It is so creamy and the mochi is so chewy and the texture is just amazing.

Instructions

Step 1
Combine all the ingredients except the butter for the mochi and mix together in a bowl
Step 2
Cover with plastic wrap and poke a few holes in it. Steam for 20 minutes on low heat.
Step 3
Add butter into the mochi and mix with a spatula. Then knead with your hands until stretchy.
Step 4
Set mochi aside to cool

For cheesecake, sift your matcha powder. Then pour in warm water and mix until a paste forms.
Step 6
Microwave your whipping cream for 10 seconds (or boil for 5 minutes) then slowly mix it into the matcha paste.
Step 7
Mix room temperature cream cheese with sugar with a spatula until smooth.
Step 8
Add your sifted corn starch and mix
Step 9
Add your eggs one at a time and mix. Then, add the matcha mix into the cream cheese bowl and mix until smooth.
Step 10
Line your 6 inch cake pan with parchment paper. Tip: Crumple your paper up into a ball then unfold it for easy lining!
Step 11
Pour half the batter into the 6 inch pan and put into preheated oven at 450 F. Bake for 10 minutes.
Step 12
Take the cake out and put the mochi in. Then pour in the rest of your batter and bake at 450 F for 18 more minutes until top is burnt.
Step 13
Rest overnight in fridge. Enjoy!
