Instructions

Step 1
1. In a saucepan, whisk together the skim milk, cocoa powder, powdered erythritol, vanilla extract, and a pinch of salt.

2. Heat the mixture over medium heat until it starts to simmer, stirring occasionally.

3. In a separate bowl, whisk the eggs until well beaten.

4. Gradually pour a small amount of the heated milk mixture into the beaten eggs while whisking constantly.

5. Pour the egg mixture back into the saucepan with the remaining milk mixture while whisking continuously.

6. Continue to cook the mixture over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon. This step creates a custard base for the ice cream.

7. Remove the saucepan from heat and let the mixture cool to room temperature.

8. Once cooled, transfer the custard base to an ice cream maker and churn according to the manufacturer’s instructions.

9. When the ice cream reaches a soft-serve consistency, transfer it to a lidded container and freeze for a few hours to firm up.

10. After freezing, your low-fat sugar-free ice cream with eggs is ready to be enjoyed.
