Step 1
1. Preheat oven to 350°F, spread liquid coconut oil in baking pan and sift your dry ingredients in a separate bowl.

2. In your stand mixer blend the coconut oil, vanilla and the eggs. Set to speed 2 and gradually increase to 6. Mix for 1-2 min until light and well mixed.

3. Set your mixer to speed 4 and gradually combine the the pre sifted ingredients (gluten-free flour, salt, baking soda, baking powder) with the water.

4. Once fully mixed, lower the speed to 2 and add the chopped nuts and the milk. Continue mixing until well combined.
Step 5
5. Pour into your greased pans. I use coconut oil to grease the pan.
Step 6
6. Cupcakes cook 16-20 minutes. 6 inch rounds cook about 24-30 minutes and 8 inch rounds cook 30-35 minutes. Watch after 20 minutes in case your oven runs hot. Test with toothpick .
