Strawberry & Rhubab Crumble Muffins It’s almost spring and the sun is out in Scandinavia which means it’s the perfect time for these delicious Strawberry & Rhubab Muffins Batter: 3 eggs 290 g flour 2 1/2 tsp Baking powder 1 tsp salt 190 g sugar 190 g vanilla yogurt 90 ml melted butter 50 ml oil 3 long stems of rhubarb (cut to small pieces 7-8 big strawberries Crumble: Combine the following ingredients: 50 g melted butter 25 g white sugar 50 g brown sugar 100 g flour Instructions Combine butter, sugar and eggs and whisk together in a bowl. Add the yogurt at whisk again. Fold in the dry ingredients, followed by the rhubab and strawberries. Line 12 paper muffinforms in a muffintin and fill them up to the edge. Sprinkle the crumble on top and let them bake at 220 °C fan oven for 5 minutes, and turn down the heat to 180°C and bake for 20 minutes. For the crumble
Instructions
Step 1
Combine the crumble ingredients together and leave to the side
Step 2
Combine butter, sugar and eggs and whisk together in a mixer
Step 3
Add the yoghurt and whisk again
Step 4
Fold in the dry ingredients
Step 5
Fold in the rhubarb and strawberries
Step 6
Line 6 muffin tins with muffin cases and fill them up to the edge
Step 7
Sprinkle the crumble on top let them bake at 220°C for 5 miniutes
Step 8
Turn the oven down to 180°C and bake for an additional 20 minutes
Step 9
Let them cool down before enjoying!!
