Watermelon Tomato Gazpacho

Ingredients
4 servings
3 cupswatermelon
seeded and puréed in a blender
1 cupwatermelon
diced small
1 cuptomato
seeded, diced small
1 cupcucumber
peeled, seeded, and diced small
½ cupbell pepper
red or green, diced small
2 Tbsplime juice
cilantro
1 tspginger minced
0.5jalapeño
small, seeded and minced
1green onion
white and 1 in of green, minced
1 tspsalt
fresh ground pepper
Instructions
Step 1
In large glass bowl or container, combine the watermelon purée with the diced watermelon, tomato, cucumber, bell pepper, lime juice, cilantro, ginger, jalapeño, green onion, and salt. Stir to combine
Step 2
Season with fresh ground pepper and additional salt, if desired.
Step 3
Ladle into chilled bowls and serve or refrigerate to chill and then serve.
