Instructions
Step 1
In a medium saucepan, bring water or vegetable broth to a boil. Add quinoa and simmer for about 15 minutes or until cooked. Let it cool.

In a large bowl, combine the cooked quinoa, baby spinach, mixed berries, goat cheese, and chopped nuts.
