Lower-Sugar Crispy Cake
This is a low-sugar icebox cake that makes minimal mess in your kitchen. The recipe as I found it doesn't call for any added sweetener, but I like a little stevia or sucralose in there as well as a few drops of vanilla, orange or mint extract. Use the best chocolate and cocoa you can afford.

Step 1
1. Whisk together the evaporated milk, melted dark chocolate, butter, cocoa powder and (optional) sweetener until combined.

2. Fold in the crushed biscuits.
Step 3
3. Cut two long sheets of foil and divide the batter between them. Using the foil, form a 10"x2" (or thereabouts) log and wrap tightly.
Step 4
4. Freeze for at least two hours, until log has set, then slice and serve.
