Watermelon Mint Mocktail

Instructions

Step 1
Put the watermelon into a blender and add the lemon juice. Blend until smooth.
Step 2
Place the mint leaves at the bottom of your serving glasses and lightly muddle them to release the flavour. You can use the back of a wooden spoon as well. You just want to do it a couple times.
Step 3
Add a handful of ice to the glass. Fill about halfway with the watermelon mixture and then top it off with the club soda. Add sweetener and pinch of salt if using. Stir gently.
Step 4
Add some more mint to the top and enjoy!!
