Instructions

FOR THE CRUST

Step 1
In a mixing bowl, combine the whole wheat flour and cold butter cubes. Use a pastry cutter or your hands to blend until the mixture resembles coarse crumbs.

Gradually add ice water, 1 tablespoon at a time, and mix until the dough starts coming together. Be careful not to overmix.

Form the dough into a ball, flatten it into a disc, and wrap it in plastic wrap. Refrigerate for at least 30 minutes.

FOR THE FILLING

Step 4
In a large bowl, combine the sliced apples, granulated sugar or sweetener, ground cinnamon, ground nutmeg, lemon juice, and cornstarch. Toss until the apples are coated.

ASSEMBLY

Step 5
On a floured surface, roll out the chilled dough into a circle that's slightly larger than your pie dish.
Step 6
Gently transfer the dough to a 9-inch pie dish and press it into the bottom and sides.
Step 7
Pour the apple filling into the pie crust and spread it evenly.
Step 8
Roll out the remaining dough and cut it into strips for a lattice top or cover the pie with a full crust.
Step 9
If using a lattice top, weave the strips over the pie filling. If using a full crust, make a few slits on top to allow steam to escape.
Step 10
If desired, lightly brush the crust with a bit of milk or egg wash for a golden finish.
Step 11
Place the pie on a baking sheet to catch any drips and bake at 375°F/190°C for about 40-45 minutes, or until the crust is golden brown and the filling is bubbly.

Let the pie cool for a bit before slicing and serving
