Instructions
Step 1
Place the bacon in the air fryer in a single layer. Cook for around 8 mins on 190 degrees. Drain on kitchen paper.
Step 2
Add the eggs to a pan of boiling water. For a slightly runny center simmer for 7 minutes. Drain and run under cold water. Once cool enough, peel and slice in half. Set aside.
Step 3
In a bowl add the rocket, chives and parsley. Mix the olive oil with the mustard and drizzle over.
Step 4
Add the tomatoes and break up the crispy bacon into chuncks sprinkle over the salad and finish off with the egg halves. Enjoy 😊
