Step 1
Preheat oven to 220 °C.
Step 2
Chop sweet potato and pepper into chunks. Season chicken with salt, pepper and garlic powder.
Step 3
Add the pepper and sweet potato to a baking tray and drizzle with oil and season with salt and pepper. Bake in oven for 15 mins and then add the chicken and cook for a further 15 mins.
Step 4
On a plate, add the washed spinach, cooked sweet potato, peppers and chicken.
Step 5
Drizzle with balsamic vinegar and enjoy.
