Instructions
Step 1
Wash and prepare fruit. If using cherries, remove pits. If using rhubarb, dice into large pieces
Step 2
In a large , combine the fruit and water. Cook over low heat until the fruit is tender
Step 3
Line a sieve with a cheesecloth and place over a large bowl. Pour the cooked fruit into the sieve. Do not crush the fruit. Put the fruit into a large serving dish.
Step 4
Add enough water to the reserved juice to make one quart, place in a saucepan, and bring to a boil over medium heat
Step 5
Mix the cornstarch with a bit of cold water. Add it to the hot juice, stirring constantly
Step 6
Sweeten with sugar if needed. Pour the thickened juice over the fruit
Step 7
Sprinkle lightly with sugar to prevent a skin from forming on the surface.
Step 8
Serve with cream,custard, vanilla sauce,pudding,ice cream, or a dollop of fresh whipped cream
