Instructions

Step 1
Select a pan that will fit all pears upright alongside each other with as little space as possible.
Step 2
In the pan, add the wine, sugar, cinnamon cloves and the lemon zest. Add the vanilla if available. Heat to a light simmer.
Step 3
Meanwhile, peel pears (leave the stalk)
Step 4
Cut the base of the pears so they will stand upright in the pan.
Step 5
When the liquid start to simmer or the sugar is dissolved, place the pears in the pan upright. Ensure the flesh of the pear is submerged. If not...

Either: (a) Add water or (b) add wine or (c) tilt pears till bulk submerged and rotate if necessary to ensure even cooking.
Step 7
Cook on a simmer until cooked. Test with a fork to see if done. Take pears out.
Step 8
Simmer liquid until it is thicker but sufficient to pour over the pears. This will enhance the flavour and texture.
Step 9
Serve as whole pears or slice and serve to avoid the pear cores.
