Step 1
Peel and dice apples into cubes. Coat diced apples in 2 tbsp of lemon juice to prevent browning.
Step 2
Add cubed butter to a medium skillet and melt down. Once melted, add diced apples into skillet and toss until apples are coated.
Step 3
Stir in sugar, brown sugar, salt, lemon zest, vanilla extract and pumpkin pie spice. Bring to a simmer and cook for about 5 minutes, until apples soften.

Note: That is typically all the I do to my filling, but if for some reason I feel that it isn’t thick enough I will make a cornstarch slurry to thicken it up a bit.
