Ingredients
10 servings

28 ozcan tomato purée
or sauce

2 x 15 ozcans diced tomatoes

4 cupsvegetable broth
or chicken

1can red kidney beans
drained and rinsed

1 cancannellini beans
drained and rinsed

2 x 15 ozcans cut green beans
drained

1onion
diced

3carrots
sliced

3celery stalks
sliced

2zucchini
diced

1 tsporegano

1 tspbasil

1 tspparsley

1 tspsalt

1 tspblack pepper

4garlic cloves
minced

1 ½ cupsditalini pasta
Instructions
Step 1
To a sprayed or lined crock pot add the onion, carrots, celery, tomato purée, diced tomatoes, chicken broth, garlic, seasonings and beans. Fill the tomato purée can with water and add that to the crock pot. Cover, cook on low 6 hours or high 3 hours.
Step 2
Add in the zucchini, green beans, and ditalini pasta and cook another 15-30 minutes until the pasta is cooked.
Step 3
Serve with fresher grated parmesan cheese.
Step 4
*if you have a parmesan cheese rind add that in to the soup while it cooks
