Instructions

Step 1
Mix the yeast and warm water (1/4 cup) in a bowl and let it sit for 10 minutes (add some sugar). Mix in the flour,sugar,salt,butter, and water and form the dough. Knead the dough on a lightly floured surface for about 10 minutes.
Step 2
Place the dough in a greased bowl and cover with plastic wrap and let rise and double in size for about 60-90 minutes. Knock the dough down and knead for about 2 minutes. Place back into the bowl and let it rise again. Knock the dough down again and knead for 2 minutes. Cut the dough into 8 pieces and set aside.
Step 3
Mash the curry to form a paste

Mix the egg and milk in a bowl. Roll out one of the pieces of dough into a 6 inch circle and place a spoonful of curry in the center. Brush some of the egg wash around the edge of half the dough and fold it over and pinch it closed. Fold the pinch to 1 side and set aside.
Step 5
Form the rest of the buns until done
Step 6
Dip the buns into the panko and cover them well with crumbs. Let them rise while you heat the oil.
Step 7
Heat the oil in a skillet and place buns into the skillet. Fry until golden brown on both sides (about 60-90 seconds per side). Place cooked buns on paper towels to drain while they cool.
