Cia’s Breakfast Sausage Gravy

Sausage Gravy is a staple side for any full breakfast meal.
We enjoy Sausage Gravy with toast, biscuits, or Potatoes O’Brien. I’m embarrassed to say I keep my leftovers in a container for a quick hearty snack throughout the day!
Some key tips:
No additional salt is used in this recipe. The butter and pork provide plenty of flavor.
This recipe lists dried seasonings for cost and simplicity purposes. Feel free to use fresh minced garlic, spices or herbs in place of listed ingredients.
Keep in mind, when you add fresh garlic will change the sweetness of your dish. Fresh Garlic that cooks longer (the beginning of a recipe) will carmalize and sweeten, whereas if you add in Fresh Garlic at the end, it will be more pungent and savory. Fresh garlic melds well with other ingredients and can deepen their flavors throughout cooking dishes. That being said, if you choose to use Fresh Garlic, herbs or spices, be sure the timing of cooking is to your preference.
The type and brand of flour you use can change the texture and flavor of your recipes. This recipe requires an all-purpose flour. I highly recommend the King Arthur Unbleached All-Purpose Flour.
Similarly, not all heavy creams are made equal. I prefer Horizon Organic Heavy Cream. Costco sells a large container that can be used for most of my favorite recipes throughout the week to keep your grocery bill lower.
Costco also sells a large pack of Kerrygold salted butter. I keep the unused sticks in the freezer and the “stick in use” ready-to-go in my fridge drawer.
For the seasonings, specifically rosemary, I just use dried rosemary found in the seasoning section. Quality dried seasonings or spices can make or break your flavor. Invest in quality seasonings like Kirkland brand (large quantities) or even McCormick.
This is a “medium-heat” and (optional) slow recipe. The longer you let the gravy sit on low heat after mixed, the deeper the flavor. If you are short on time, you’ll get a close outcome that is still quite tasty!

Step 1
Brown the sausage in a skillet or sauté pan over medium-high heat until no longer pink. Break down the sausage to small pieces, no larger than a pinky tip.

Once light brown, keep on medium-heat and add cold butter to the pan. Stir until melted.

Sprinkle the flour over the butter coated sausage and stir on medium-heat for 2 minutes. The flour should soak up the majority of the liquid in the pan.

Mix in the seasonings. As always with my savory recipes, you may want to add a 1/2 teaspoon of Tony’s Everything Creole Seasoning for extra flavor.

Immediately after seasoning the meat, pour milk and heavy cream into the sausage and flour mixture slowly, stirring constantly on medium-high heat.

Allow the gravy to cook on low heat for a minimum of five minutes, stirring occasionally. Taste and add seasoning to preference, if needed. For a deeper flavor, let the gravy cook on extremely low heat for 20-30 minutes, stirring occasionally.
