Instructions

Step 1
To prepare the Cinnamon spice blend; combine all the spice ingredients in a small bowl.
Step 2
In a large bowl, combine the flour, caster sugar, cinnamon mix, salt and butter, mix well, add the milk and knead all ingredients together with your hands or a mixer with dough hook. (Once you can form a ball, the dough should be ready), wrap the dough in cling film and let it rest in the fridge for 30 minutes.
Step 3
Prepare baking tray with parchment paper, take the dough out of the fridge, turn it into very small balls (maximum Ø1.5 cm), place them on the baking tray, and gently press each ball until it flattens slightly, leaving a space of 2 cm between them.
Step 4
Bake the cookies at 200°C for 15 to 20 minutes “in 2 batches”, (if using fan-forced “convection”, reduce the temp by 20˚C), remove and let it cool completely before serving or store them in an airtight container.
