Ingredients
4 servings

½ tlime zest

1.5 Tlime juice

1 tablespoonsfresh cilantro
chopped

1 tablespoonsfresh oregano
chopped

1 tablespoonsgreen onion
finely chopped

⅛ teaspoonssalt

⅛ teaspoonscayenne pepper

1 x 15 ouncecan black beans
rinsed and drained

1avocado
medium, halved seeded peeled and diced

1tomato
medium, diced

4 x 6 ounceskinless salmon fillets

2 tablespoonshoney

1 ½ teaspoonslime zest

¾ teaspoonssalt

1 tablespoonolive oil

¼ teaspooncayenne pepper
Instructions
Relish
Step 1
In a small bowl, combine lime zest, lime juice, herbs, green onion, oil, salt, and cayenne pepper.
Step 2
In a medium bowl, combine avocado, tomato, and beans. Stir in cilantro mixture. Cover and chill until serving time.



Salmon
Step 3
Thaw fish if frozen. Rinse and pat dry. Place in a shallow dish and drizzle with honey.


Step 4
In a small bowl combine 1 1/2 t lime zest, 1/2 t salt, and 1/4 t cayenne pepper. Sprinkle evenly over fish.


Step 5
Cover and marinate in the fridge for 2-4 hours unless you drive have time then just move on to the baking.
Step 6
Bake in the oven at 350 degrees or oh the grill over medium heat for 14-18 minutes or until fish flakes when tested.
Step 7
Serve topped with relish, rice pilaf, and steamed carrots.
