Instructions
Step 1
In a small mixing bowl, combine the softened cream cheese with a pinch of salt and pepper. Mix until smooth and well combined.
Step 2
Lay out the two whole-grain tortillas or wraps on a clean surface.
Step 3
Spread a generous layer of cream cheese evenly over each tortilla, leaving a small border around the edges.
Step 4
Layer the shredded carrots, thinly sliced cucumber, bell pepper strips, and baby spinach leaves evenly on top of the cream cheese. Add optional sliced turkey or ham if desired.
Step 5
Carefully roll up each tortilla tightly from one end to the other, creating a long roll or log.
Step 6
Using a sharp knife, cut each roll-up into bite-sized pinwheels, about 1 inch thick.
Step 7
Place the Cream Cheese and Veggie Roll-Ups in a lunch container, securing them with toothpicks if needed to keep them from unrolling.
Step 8
Add some extra veggies or fruits on the side for a balanced meal.
Step 9
Seal the container and refrigerate it until it's time to pack your child's lunch.
