Instructions

Step 1
Filling: - In a pan, melt the butter. saute garlic and onion. Then add ground chicken. Once the chicken has turned into a light color, add in the carrots and 1 celery stalk diced. Half cook the carrots before adding in the peas and bell pepper. Let it cook for about 1-2mins. - Set aside and let it cool
Step 2
On the same pan, melt 2tbsp of butter. Stir in 1/4 all purpose flour. Continue stirring then gradually add 1/2 cup of milk. Cook until the mixture becomes creamy then gradually add 1 cup of water (it will turn into gravy like texture). Season with 1 chicken cube, salt, pepper, 2 tsp sugar. Mix and let it simmer. Add in the chicken mixture and let it simmer again. until it fully coats the chicken. Add cubed cheese (optional)
Step 3
Dough: - In a bowl, put 1kg 3rd class flour (or cake flour or all purpose flour), 2 tsp salt, 4 tsp sugar. Combine all ingredients - Add shortening (you have the option to use butter, butter compound or margarine). Mash the shortening in the flour - Add 400ml of water. Mix until the dough is formed (do not knead the mixture). Let it rest for 10-15mins
Step 4
Beat 1 egg. Lightly dust your work bench then transfer the dough. Flatten the dough and cut the dough using round cookie cutter. Make sure you put four on the dough esp if you're stacking them together so it wont stick to each other
Step 5
Assemble: - Again flatten each cut dough into a thinner size - Brush the whole surface of the dough with the beaten egg then place a spoonful of filling. Get another flattened dough and place it on top of the first dough. Press the edges and crimp sides using a fork to seal it - Brush it again with the beaten egg, poke the dough with fork to serve as vent. then repeat on the remaining dough

For added design, get another flattened dough make cuts using a lattice roller then place it on top of the filled dough. For a 'cleaner finish, cut the excess dough using the round cookie cutter (if your cookie cutter has fluted design the better)
Step 7
For baking: brush the pies with egg wash and bake in a preheated oven at 180C for 30-40mins For frying: heat oil to about 160-180C and deep fry tit for 3mins each side or until golden brown
Step 8
Storage: If you have excess dough and fillng, just place it in the freezer. Thaw it before using
