Instructions
Step 1
Pour the prosecco/sparkling wine/champagne into a smaller saucepan on medium heat. Bring to a light boil, and simmer until the liquid has reduced to about half (or 119g). Remove the liquid from the stove top, and allow to cool completely.
Step 2
Slowly add the liquid to the prepared batch of swiss meringue buttercream, until well-incorporated.
Step 3
Remove about 1/3 of the prosecco mixture from the bowl, and add the blackberry sauce. After it has been thoroughly mixed, add the blackberry frosting to the remaining buttercream and mix until fully incorporated.
Step 4
Place into a piping bag, and decorate your cake! Enjoy :)
