Ingredients

1 boxyellow cake mix

1 cupsour cream

¾ cupvegetable oil

4eggs

2 tspvanilla extract

1 cupsweet potato
mashed

1 cuplight brown sugar

2 tspground cinnamon

½ tspground nutmeg

¼ cuppecans
finely crushed, optional

Icing
Instructions
Step 1
Bake a sweet potato for an hour or until tender. Set aside. In a mixing bowl, beat together cake mix, oil, eggs, sour cream and vanilla extract and mix until well combined.
Step 2
Fold in mashed sweet potato and mix until well combined. Add orange food coloring if desired.
Step 3
Spray a 9x13 inch baking pan and pour in half of the batter.
Step 4
In a small bowl, combine brown sugar, cinnamon, nutmeg and pecans and sprinkle on top of the batter.
Step 5
Pour remaining cake batter on top then use a skewer or a knife to swirl through the batter.
Step 6
Bake for 350 degrees for 30-35 minutes or until a toothpick comes out clean.
Step 7
While the cake is still warm, drizzle vanilla glaze and allow it to set before serving.
For the icing
Step 8
Whisk the sugar, vanilla and milk together until smooth.
