For the Dressing
Instructions
Step 1
Preheat oven to 400 degrees. Line a baking tray with parchment paper.
Step 2
Add the sweet potatoes, cauliflower, onion powder, garlic powder, paprika, olive oil, and salt to the tray and toss to combine. Bake in the oven for 30 minutes until veggies are golden, tossing halfway through.
Step 3
Make the dressing by adding add ingredients to a blender and blending until smooth.
Step 4
Once removed from the oven, top veggies with cilantro, cashews, and dressing. Enjoy!
