Ingredients
6 servings
5 cupsrotisserie chicken
shredded meat from, store-bought, or Poached Chicken Breasts
1 ½ cupsred grapes
halved
¾ cuppecans
chopped, optional
¼ cupgreen onions
thinly sliced, light and dark green parts, or chives
1 ¼ cupsmayonnaise
preferably
kosher salt
freshly ground black pepper
12croissants
small, sliced horizontally in half
6 leavesbutter lettuce
2vine-ripened tomatoes
thinly sliced
Instructions
Step 1
1. Combine the chicken, grapes, pecans (if using), and green onions in a large bowl and toss to combine. Add the mayonnaise and salt and pepper to taste and stir until well coated.
Step 2
2. Cover and chill until cold, 1 to 2 hours. Taste for seasoning. Serve on the small croissants with lettuce leaves and tomato slices.
Step 3
Store the chicken salad in a covered container in the refrigerator for up to 3 days.
