INGREDIENT TIP: To give these buns that familiar yellow hue, add ¼ teaspoon of turmeric to the dough with the flour in step 2. It won’t taste like the spice, but it’ll enhance that “Hawaiian roll” aesthetic.

Step 1
1. In a small bowl, microwave the pineapple juice for 10 to 20 seconds until it’s lukewarm. Sprinkle the yeast over it and let it sit for 5 minutes to activate.

2. Spray a large bowl with nonstick baking spray.

3. Use a handheld electric mixer or a stand mixer fitted with the dough hook. In a large bowl, combine the flour, sugar, and salt. Mix on low until combined. Add the yeast mixture and then the mashed potatoes, egg, and 3 tablespoons of melted butter. Mix until the dough forms a ball, coming clean off the sides. Transfer the dough to the prepared bowl. Cover with plastic wrap and let rise in a warm area for 2 hours.

4. Spray a loaf pan with nonstick baking spray. Divide the dough into six equal pieces. You can either eyeball it or use a kitchen scale. Roll each piece into a ball and place it in the loaf pan. Cover the pan with plastic wrap and let rise for 1 hour.

5. Preheat the oven to 350°F.

6. Bake the rolls for 25 minutes, or until they’re evenly browned. Remove from the oven and brush the tops with the remaining 2 tablespoons of melted butter.
