Instructions
Step 1
Preheat oven to 350°F. Place sprinkles in a small bowl and set aside. Line an ungreased baking sheet with parchment paper and set aside.
Step 2
2. In the bowl of a stand mixer, add butter and sugar. Using the flat beater attachment, cream together well. Add eggs and vanilla and combine. Add flour, baking powder, and salt. Combine.
Step 3
Scoop about 2 tablespoons dough into your hand and roll into a ball. Place on prepared baking sheet and flatten a little with the bottom of a glass. If you have a Mickey cookie cutter, use it now to make a Mickey shape, discarding the extra dough around the edges. Lightly dot top of cookie with sprinkles, pressing sprinkles into dough a bit. Repeat with remaining dough.
Step 4
4. Bake until bottoms just barely brown, about 15 minutes.
Step 5
5. Allow to cool slightly on the sheet, about 10 minutes, before moving cookies to a cooling rack. Store leftovers in an airtight container at room temperature for up to 5 days.
