Some of the crispiest chicken you'll ever eat. Triple fried to perfection. You don't have to use Dan-O's Cheesoning for this, feel free to customize with whatever seasonings you like.

Marinade
Dry Batter

10gbaking powder
200grice flour
300gcorn starch

2 Tbspherb and parmesan seasoning mix
Wet Batter
225gdry batter
300gsparkling water
ice cold
Instructions
Step 1
1. Submerge chicken drumsticks in the marinade and refrigerate for at least 6 hours (preferably overnight).

Preheat oil to 300 F

Meanwhile, make dry and wet batters. Keep the wet batter in the fridge when not in use.

Step 4
Coat the chicken drumsticks in dry batter and fry at 300 F until cooked through, about 6-10 minutes depending on the size of your drumsticks. Drain and let the drumsticks cool to room temp (about 30 min).
Step 5
Heat the oil to 320 F. Then dip the chicken in the wet batter, forming a thin layer. Fry for 2-3 minutes until the crust sets. Rest again until at room temp.
Step 6
Heat oil to 375 F. Dip the chicken one more time, letting most of the batter drip off. Fry for 2-3 min until golden and crispy. Enjoy!
