Ingredients

Chicken seasoning:
3 tspsalt
2 tsppepper
2 tsppaprika
2 tspgarlic powder
2 tsponion powder
1 tspcoriander
½ cupolive oil
juice of a whole lemon
Breading ingredients:
¾ cupall purpose flour
¾ cuppanko bread crumbs
1 tsponion powder
1 tspgarlic powder
1 tsppaprika
2 tspsalt
2eggs
1 cupbuttermilk
or whole milk
1 tspsalt
Spicy Mayo Dip:
Instructions
Step 1
Marinate the chicken with all the ingredients listed under chicken seasoning.
Step 2
Bake the chicken for 30 minutes at 375°F.
Step 3
Remove the chicken from the oven and allow to cool to touch.
Step 4
While it's cooling, prepare the breading mix by mixing the dry ingredients in one bowl and the wet in a separate bowl.
Step 5
Dip the chicken in the egg mixture, followed by the flour mixture. Be sure to fully coat the chicken pieces.
Step 6
While coating the chicken, have a large frying pan filled with oil about one inch deep. Heat the oil until it bubbles when a wooden stick is placed into it. When bubbles appear quickly, the oil is ready to fry the chicken.
Step 7
Begin frying the chicken pieces in batches until the breading gets a nice golden color. The chicken is already pre-cooked so the only concern at this stage is the color of the breading.
Step 8
Enjoy with the spicy mayo dip!
