Cob Loaf Spinach Dip

A favourite recipe served at family parties. I got this recipe from my mother in law Typically served in a large cob loaf but also enjoyable in smaller rolls as an individual serve

Instructions

Step 1
Heat oven to 200 degrees Celsius
Step 2
Cut top off cob loaf to create a lid
Step 3
Pull out the bread inside loaf and then tear apart into small pieces for dipping into the cob loaf when it’s served
Step 4
Place cob loaf on a tray with lid to the side (upside down with the crust down) and small pieces of bread. Lightly spray with an oil (I typically use olive oil) and cook till crisp
Step 5
Cook spinach to packet instructions and drain
Step 6
Mix sour cream, mayonnaise (to taste), spinach, cheese, spring vegetable soup packet mix
Step 7
Season to taste
Step 8
Cook mixture in microwave for 7 minutes, mixing every few minutes
Step 9
Pour cooked mixture into cob loaf, place the lid and cook in oven for 10 minutes
Step 10
Serve on a platter surrounded by smaller bread pieces
