Step 1
Preheat oven to 350 Fahrenheit

Grease 2 quart casserole dish
Step 3
Heat oil in pot and cook chicken until no longer pink
Step 4
Add taco seasoning, salsa, peppers, beans, corn, and diced tomatoes to the pot

Stir mixture until well combined and cook down until most of the water has steamed off
Step 6
Prepare cornbread according to package adding in the cheese
Step 7
Transfer the meat and vegetable mixture from the pot to the casserole dish
Step 8
Top the casserole dish with the cornbread mixture
Step 9
Sprinkle diced red bell pepper on top of the cornbread
Step 10
Bake 30 minutes or until cornbread is done
