Instructions
Step 1
Melt butter in a small pot and let it brown slightly. Remove the pot from the heat and let the butter cool lukewarm.
Step 2
Flour, brown butter, salt and powdered sugar first with the kneading hooks of the hand mixer, then knead briefly with your hands to a smooth dough. Place the dough covered in the refrigerator for about 20 minutes.
Step 3
Preheat oven to 180 degrees, convection 160 degrees, gas level 3.
Step 4
Roll out the dough on a little flour about 3 mm thick, cut out diamonds (about 6 x 4 cm in size). Place the rhombuses on baking sheets lined with baking paper. Bake in the preheated oven in about 10 minutes until golden. Let cool on a wire rack.
Icing and Decorations

Mix matcha powder and 100 g powdered sugar and mix with the lime juice to a smooth thick pour. Fill the cast into a small high bowl. Dip cookies one after the other in the cast up to half, strip them on the sides and place them on a piece of baking paper or a cake rack to dry.
Step 6
When the cast is dry, cover the cookie half with cast with a piece of paper, dust the second half of the cookies with the remaining powdered sugar. If necessary, dip sugar pearls in some cast, place on the powdered sugar side. Let it dry.
