Instructions

Step 1
Preheat oven to 350 degrees with the first rack on the second level from the bottom and the other rack 2 levels from the top.
Step 2
Beat together the softened butter and sugars together in a mixer until light and aerated
Step 3
Add the eggs, vanilla, and lemon juice (or lime juice/vinegar) then beat until light and aerated.
Step 4
Add in the flour, baking soda, and salt and beat 3-4 minutes. Finally, add in the chocolate chips/chunks and stir in or gently beat until evenly combined.
Step 5
On a tray lined with parchment paper, place 2-3 Tablespoon scoops of dough approximately 2 inches apart. Bake on the bottom rack for approximately 6 minutes, or until the dough has almost fully spread out flat, then move the tray to the top rack and bake for an additional 5-8 minutes. I bake until the edges just barely start to brown and then I let the cookies cool on the tray for about 5 minutes before transferring to a cooling rack. Optional - sprinkle with flakey sea salt while cooling.
