Ingredients

1 ¾ cupsquick-cooking rolled oats

1 ½ cupsall-purpose flour

2 tspbaking powder

¼ tspbaking soda

¾ tspsalt

1 tspground cinnamon

¼ tspground ginger

10 Tbspunsalted butter
divided, 1 stick softened

1Granny Smith apple
peeled, cored, and cut into 1/4-inch cubes

1 Tbspfrozen apple juice concentrate

1 cupbrown sugar
firmly packed

½ cupgranulated sugar

1egg
large

2 tspvanilla extract

1 cupdark raisins
optional

1 cupwalnuts
chopped, optional
Instructions
Step 1
Position a rack in the center of the oven and preheat the oven to 375ºF. Lightly grease two baking sheets.
Step 2
In a medium bowl, combine the oats, flour, baking powder, baking soda, salt, cinnamon, and ginger. Set aside.







Step 3
Heat the 2 Tbsp of cold butter in a medium skillet over medium heat until melted and foamy. Add the apple and cook, stirring occasionally, until softened, about 3 minutes. Stir in the apple juice concentrate and Cooke for another minute. Set aside to cool.



Step 4
In the bowl of an electric mixer, using he paddle attachment, beat the remaining softened butter and the sugars at medium speed until combined, about 1 minute. Add the egg and vanilla extract and beat until blended. At low speed, add the flour mixture one-third at a time, mixing just until blended. Using a wood spoon, stir in the sautéed apple, raisins, and walnuts (if using).





Step 5
Drop the dough by rounded tablespoonfuls onto the prepared sheets, spacing the cookies 2 inches apart. Moisten your palm to prevent sticking, and flatten the mounds of dough slightly. Bake for 11 to 13 minutes, until the cookies are golden brown on the bottom. Transfer the cookies to a wire rack and cool completely.
