Step 1
Preheat oven to 350 degrees F (175 degrees C).

Spread oats on a cookie sheet and bake for 5 minutes. Remove from oven and cool

In a spice grinder or food processor, grind 2 tablespoons of baked oats into a powder
Step 4
In a bowl of a stand mixer, mix together the peanut butter, butter, and sugars until fluffy.

Mix the eggs and vanilla into the butter mixture

In a separate bowl mix the flour, baking soda, salt, oat and oat powder together, toss the butterscotch in and mix by hand until well combined

Use a 1” cookie scooper to scoop the batter onto a lined cookie sheet

OPTIONAL: Gently press the tops of the cookie down with a fork. If you don’t press them, they will turn out nice and fluffy and have a nice crumble.

Bake for 12-15 minutes until cookies are golden and allow to cool before serving
