Scallops with Leeks Fondue

Instructions
Step 1
Open scallops by placing large knife at base and move towards the curvature of the shell. Grab the black part with a small knife and remove
Step 2
Preheat oven to 350°F
Step 3
Cut the leeks in length and wash. Chop leeks very thin
Step 4
Heat butter and saute leeks on low heat for 2-3 minutes, stirring frequently
Step 5
Add cream, salt and pepper and reduce
Step 6
Place a small piece of butter on each scallop. Season with pepper.
Step 7
Bake for 6 min
Step 8
Spoon leek fondue over scallop and top with chives
