MEXICAN MEAL PREP FOR WEIGHT LOSS: CHORIZO Y PAPA FRITTATA 🍳 I know the extra step of baking may seem extra but I was tired of making omelettes every morning! We’re sneaking in some vegetables and extra protein with the egg whites to make this a more balanced breakfast and perfect for anybody who has a protein goal to hit.

Step 1
1. Pre heat oven for 350° F.
Step 2
2. Chop the onion, zucchini, and potato.
Step 3
3. In a pan, break up chorizo and add potatoes and onion. Cook for 5 minutes.

4. Add in the zucchini and cook for 2 minutes.
Step 5
5. In a bowl, mix egg whites, eggs, salt, and pepper.
Step 6
6. In an oven safe dish, add egg mixture, chorizo mixture, and 1 cup fat free cheese. Add additional seasonings to taste.
Step 7
7. Bake in the oven for 35-40 minutes or until the egg are cooked thoroughly.
Step 8
8. Cool and divide into 4 even servings.
