Step 1
In a 9 inch springform cake pan, cover the bottom with a single layer of the sugar cookies. Fit as many as you can. Bake according to the package directions (at 325 degrees about 14 minutes). Any cookies that don’t fit cook on a separate baking sheet.
Step 2
In a large bowl, hand mix the cream cheese until smooth. Then add the icing sugar, granulated sugar, sour cream, lemon juice & vanilla & mix until combined.
Step 3
In a separate bowl, mix the heavy cream until it starts to stiffen. Then gently fold in by hand the whipped cream into the cream cheese mixture.
Step 4
Evenly distribute the cheesecake layer onto the sugar cookie base. You can top it with the extra cookies and any type of sprinkles you’d like. Refrigerate for about an hour at least before cutting and serving.
