Susie's Glazed Yams

Our traditional Thanksgiving glazed yams. Make the day before!

Instructions

Step 1
Peel the yams, leave whole, boil for 10-15 minutes until al dente. Reserve 2 cups of the cooking liquid. Drain and let cool.
Step 2
Slice yams on the bias, 1 1/2 inches thick. Arrange overlapping in a 9x13 inch baking pan.
Step 3
Make the glaze: heat the reserved cooking liquid to a simmer. Add orange juice, sugar, salt and ginger powder. Simmer for several minutes, remove from heat and add the liqueur. Pour over the yams to cover about 1/2 inch. Reserve the rest of the glaze. Cover and refrigerate.
Step 4
When ready to bake add some more of the reserved glaze, bake at 375 uncovered for 1 hr. Baste every 15 mins.
Step 5
If desired, reduce the remaining glaze to a syrup and drizzle over prior to serving.
