Ingredients
8 servings
2boneless skinless chicken breast
cooked & shredded, or rotisserie chicken
1 Tbspbutter
1 Tbspolive oil
2 Tbspminced garlic
4 cupslow sodium chicken stock
½ cuponion
diced
1 cupcarrots
2 Tbspfresh parsley
½ cupcelery
diced
1 cupheavy cream
1 cupspinach
chopped
2 cupspasta
uncooked
½ cupParmesan cheese

Instructions
Step 1
- Start off by pan cooking your chicken breast and setting it aside. ( be sure to season chicken )
Step 2
- In a soup pot add your olive oil & butter and sauté your onions, carrots, & celery.
Step 3
- After a few minutes add in your minced garlic give a good stir and cook for another 1-2 minutes before adding in your chicken stock. Season to taste and bring to a boil.
Step 4
- While it’s coming to a boil, I take this time to shred my cooked chicken breast.
Step 5
- Add in your pasta and simmer until pasta is Al dente.
Step 6
- Add in your heavy cream, chopped spinach, fresh parsley, and shredded chicken. Stir to combine & taste test. ( season more if need be. )
Step 7
- Reduce heat, add in juice of half a lemon & shaved Parmesan cheese. Be sure to top with more Parmesan cheese once in bowl.
