Instructions
Step 1
Preheat oven to 165 degrees C fan forced (180 degrees C non-fan forced). Grease and line muffin tins or line with muffin liners.
Step 2
Place dry ingredients into a medium bowl,, stir to mix well and thne whisk them together to sift them. Tip them to the side of the bowl.
Step 3
Add the milk, eggs, vanilla and oil, to the empty side of the bowl.
Step 4
Whisk the wet ingredients together and gradually incorporate the dry ingredients.
Step 5
Add the chocolate and mix well with a spoon.
Step 6
Spoon mixture into prepared muffin tins, filling about ⅔ full.
Step 7
Bake for around 15 minutes (or 25 minutes for giant muffins) – bake until the texture of the muffin under the crust that forms on the top, feels well cooked (see below for hints on this).
Step 8
Allow to cool in the in the pans for 5-10 minutes before turning out and leaving to cool on a wire rack.
