Tis the season for gingerbread flavoured goodies! Skip the cost and the excess ingredients and make my copycat gingerbread loaf instead! Recipe details below: INGREDIENTS ½ cup oil (any variety) ½ cup white sugar ½ cup brown sugar 2 eggs ½ cup unsweetened apple sauce ½ cup plain Greek yogurt or light sour cream 2 tsp ginger powder 1 tsp cinnamon ¼ tsp ground cloves ¼ tsp nutmeg 1/8th tsp salt 1 ¾ cup all purpose flour 1 tsp baking powder 1 tsp baking soda Icing 4 oz light cream cheese 1 ½ cups icing sugar INSTRUCTIONS 1. Add oil to bowl, then white and brown sugar, eggs, apple sauce Greek yogourt, spices and mix well. 2. Add flour, baking powder, baking soda and salt. Mix just until combined. 3. Pour into a 9” x5” loaf pan sprayed with oil. Bake at 350 F for about 40 minutes or just until tester comes out dry. 4. Icing: Purée light cream cheese and icing sugar until smooth. Pour over cooled loaf and enjoy!! . . .

Instructions

Step 1
1. Add oil to bowl, then white and brown sugar, eggs, apple sauce Greek yogourt, spices and mix well.
