Instructions
Step 1
Cut the chicken and cauliflower into bite sized pieces. Chop the onion and eggplant into slices.
Step 2
Using a large pot. Pan fry eggplant and cauliflower in some oil and set it aside. Cook the onions and cubed chicken halfway, using half of the spices. Set aside
Step 3
Place the eggplants and cauliflower at the bottom of the pot, add rice, water, butter and rest of the seasoning. Place a plate on top to help compact. Bring to a boil and simmer for 30 minutes.
Step 4
Once it’s done cooking. Place a tray or plate large enough to overlap the pot, flip over and slowly remove the pot. Serve warm
