Instructions

Step 1
Cut the chicken and cauliflower into bite sized pieces. Chop the onion and eggplant into slices.
Step 2
Using a large pot. Pan fry eggplant and cauliflower in some oil and set it aside. (Air fry cauliflower while egg plant cooks to save time) Cook the onions and cubed chicken halfway, using half of the spices. Set aside
Step 3
Place the eggplants and cauliflower at the bottom of the pot, add chicken, rice, water, butter and rest of the seasoning. Bring to a boil and simmer for 30 minutes.
Step 4
Once it’s done cooking. Place a tray or plate large enough to overlap the pot, flip over and slowly remove the pot. Serve warm
