Fruity Nut Bread (Bread Maker - Petrus)

A very sticky, dense, but sweet and tasty banana bread. Everything is done directly into the bread pan - the mixer will puree the banana as it turns. Depending on your machine, it may need more time than the cake or quick bread setting allows. The original used 280 grams of bananas and 80 grams oil (I used to applesauce to replace oil). It also used 1/2 tsp baking soda, 1/2 tsp baking powder, and plain flour. I've got self-raising, so that's what I used. The extra rising agents did not affect the taste of the cake and the amount used in the original seemed too low. My bread maker has a fruit/nut dispenser, but I didn't think it would matter and wanted to use more than it would hold. The fruit and nuts were still whole when it was baked. Cooked on cake in my bread maker. Still needed more bake time.

Step 1
Slice over-ripe bananas directly into the baking pan.

Add remaining wet ingredients.
Step 3
Add dry ingredients (fruit and nuts can be chopped if desired. I left them whole)

Bake on your bread maker's cake or non-yeast quick bread setting. For my machine, that is a 40 minute bake time. I baked it for a further 1:30 on the bake cycle.
